Seeds are selected for their quality and are ground as in the past with millstones in order to avoid damaging the heat-sensitive seeds and keep their flavors intact. We have found this stuff off and on for the last 20 years. We use it for an awful lot of stuff, when we can get it: Hamburgers, Meat Fondue, pork, chicken, sauces, etc. This spring I planted tarragon and was going to make it myself with a Dijon, because our local gourmet food store stopped carrying it.
Amazon to the rescue. Wouldn't use it on a hotdog or egg roll though.
